Neer Dosa

Ingredients

  • Rice - 1 glass
  • Cooked Rice - 1 Cup
  • Jeera - 1 Tea Spoon
  • Asefoedita - 1 pinch
  • Salt to taste

Preparation

  • Soak rice for 2 hours in water.
  • Grind rice with cooked rice, Jeera, Asefoedita and salt.
  • Add water to make batter as thin as possible.
  • Pour on thava with little oil/ghee.
  • Serve hot with Chutney or vegetable saagu.

Bangade Meenu Fry (Mackerel)

Ingredients

  • Bangade Meennu - 1 Kg
  • Red Chilli Powder - 4 tsp
  • Coriander Powder - 1 tsp
  • Ground Mustard/Fenugreek - 1/4 tsp
  • Lemon Juice - 1.5 tsp

Method

  1. Blend all ingredients (except oil) in a bowl.
  2. Clean and slit fish in the center.
  3. Marinate in refrigerator for a full day.
  4. Pan fry until crispy and serve hot.

Jack Fruit Bonda

Ingredients: Jack Fruit (1 Cup), Rice flour, Salt.

Method:

Grind jack fruit, mix with rice flour and salt. Roll into shapes and deep fry in hot oil until golden brown. Perfect with tea or coffee!

Coorg Pork - Pandi Curry

Spices & Base

  • • 1Kg Pork
  • • Kachampuli/Vinegar
  • • 10-15 Garlic cloves
  • • Roasted Peppercorns
  • • Cumin Powder (2 tbsp)

Instructions

1. Marinate: Pork with salt, chilli, and turmeric (15 mins).

2. Paste: Blend onions, chillies, ginger, and cumin.

3. Spice Prep: Fry cumin powder until near-black; add mustard seeds.

4. Cook: Dry-cook pork until water evaporates, add onion paste, then finish with fried cumin and vinegar.
