People of Malnad use different spices in the preparation of the local cuisines. Though the name of the dishes remains the same, the way it is prepared is unique to each destination. Travel Malnad® had organized a very successful food safari covering the entire Malnad and Coastal Karnataka destinations. One strikingly unique thing we noticed about the local dishes is, they have the same names but prepared uniquely. This information has reinforced us about the fact that food is an integral part of the evolution of different cultures.

When we ask people of Malnad why a certain dish is prepared only during a specific season, we get a lot of knowledge about science in cuisines. The climate of a region plays a pivotal role in how people decide and like about their food habits. When dishes are prepared for small numbers and large numbers the methods of preparations need to be customized. If you have eaten something at a Malnad homestay it would have tasted different, the same dish would be different at a restaurant.

The large part of the credit goes to the methods of preparation of foods and the high-quality Malnad ingredients used in it. When Travel Malnad® interviewed chefs from the Malnad region we found out that the climate conditions also play a big role in the outcome of the taste. The same chef when prepared for a large gathering at North Karnataka had observed the differences in taste. There won’t be any change in the number of ingredients used or the cooking time, still, the moisture, humidity plays a role in the results.
